Ingredients:

  • 1kg Whole Chicken
  • 1 Tbs Garlic
  • 1&1/2 Tbs Ginger
  • 1 Tbs mixed red + green chilli
  • 2 Cups Yoghurt
  • 1/4 Tsp Meat Tenderiser
  • 1/4 Cup Sunflower Oil
  • 1/4 Cup Olive Oil
  • 2 Tbs Lemon Juice
  • Salt to Taste
  • Sauce:
    • 1&1/2 Tbs fresh red + green chilli
    • 1 Tbs Garlic, coarsely ground
    • 2 Tbs Margerine
    • 1/4 Cup Olive Oil
    • 1/4 Cup Sunflower Oil
    • Juice of 1 Fresh Lemon
    • Salt to Taste

Method:

Clean Chicken and slit through middle (like butterfly). Marinate in all the above ingredients for 2 hours. Grill on charcoal until well done. With kitchen scissors cut it into 6 pieces. Keep warm in serving dish.

Sauce: Heat the margarine and oils together. When hot, add the garlic and when aroma arises, add the crushed chillies. Stir and add lemon juice and salt. keep the sauce ready. Once the chicken is done pour the sauce over and serve.
