BANANA LOAF
Ingredients
125g margarine
2 eggs
2 cups self-raising flour
4 bananas, mashed
1 cup castor sugar
½ tsp salt
½ cup water
1 tsp bicarbonate of soda
¼ cup chopped pecan nuts (optional)
⅓ cup choc chips (optional)
METHOD
Cream margarine and sugar well. Beat in the eggs one at a time, adding a little flour if mixture curdles. Add mashed bananas. Dissolve bicarbonate of soda in water. Sift dry ingredients and mix into creamed mixture alternately with soda mixture. Fold in chopped nuts and choc chips. Pour into a greased loaf pan and bake at 180˚C for 45 minutes - 1 hour or until done.
