PAELLA (SPANISH RICE)
Ingredients
500g basmati rice
2 chicken fillets, cubed
200g fillet steak, cubed
200g prawns, shelled, deveined and washed
1 each green and red pepper, diced
1 tsp green chillies, crushed
100g green onions, finely chopped
¼ tsp saffron
2 cubes chicken stock or homemade stock
Salt and pepper to taste
1 tsp garlic, crushed
1 cup oil
100g parsley, finely chopped
2 Tbs lemon juice
METHOD
Cook the rice with turmeric, saffron, chicken stock, ½ cup oil, and salt to taste. Once done, leave aside. Fry individually the steak and chicken cubes with the salt, pepper, green chillies and garlic. Stir-fry the peppers in a Tbs of oil. Similarly fry the prawns in 2 Tbs oil with the lemon juice. To the cooked rice add the stir-fried chicken, steak, prawns, and peppers and toss lightly. Decorate with chopped green onions and parsley. Serve hot.
